Simple Sweeping Hollow Ground Blade

Living in Colorado has afforded me the opportunity to do a fair amount of trout fishing through the years, and occasionally, I like to keep one or two for the dinner table. 

Years ago, I was fishing with a friend that was wise in the ways of historical blades and his preference to clean trout was to use a simple straight back blade with a long sweeping curved edge for precise, smooth cuts.  He taught me that his heavily-patinaed unmarked carbon steel blade with a simple wood handle was called a classic roach belly profile and that it was a design that’s been around for a long time dating all the way back to the colonial period.  I tried out his knife, and it worked beautifully on trout!  He mentioned that it worked well on fowl, veggies, and is a great skinning blade, too.
